3 Items on our Spring Menu that can be Modified for Vegan & Vegetarian Diets

Kerbey Lane Cafe has always been known as a haven for our friends with various dietary needs and lifestyles including those who are gluten-free, vegan or vegetarian.

In addition to the items on our 24-hour menu and our weekly featured vegan and gluten-free pancakes, we occasionally add a vegan item to our seasonal menu lineup. As we developed our Spring, 2017 seasonal menu, we noted a trend in folks modifying menu items to fit their needs as opposed to ordering the seasonal special dish.

With that in mind, here are some tips for modifying dishes on our Spring, 2017 menu to help them fit your vegan or vegetarian diet.

Brisket Hash

Traditional dish ingredients: Tender brisket, sunny-side up eggs, homefries, green peppers, white onions + toast.

Modifications

  • NO: brisket, egg
  • ADD: tofu scramble, veggie chorizo or veggie sausage patty

Huevos Motulenos

Traditional dish ingredients: Refried black beans, over-hard eggs, sliced ham, ranchero sauce, green peas, queso fresco, cilantro, white onions. Sliced avocado, fried plantains, corn tortilla.

Modifications

  • NO: egg, ham, queso fresco
  • ADD: tofu scramble or Vegan Queso

Strawberry Fields Salad

Traditional dish ingredients: Baby spinach + grilled chicken, strawberries, bacon, blue cheese crumbles, candied walnuts, tomatoes, strawberry balsamic vinaigrette.

Modifications

  • NO: chicken, bacon, blue cheese
  • ADD: grilled portobello mushroom
