Apple Cinnamon Nut Muffins

Ingredients

  • ¼ Cup Butter, soft
  • ½ Cup Granulated Sugar
  • 2 Eggs
  • ½ Cup Plain Yogurt
  • 1 ¾ Cups GF Apple Cinnamon Pancake Mix
  • 1 Small Apple, peeled and chopped
  • ¼ Cup Pecans, toasted and chopped (optional)

Directions

Preheat oven to 325° F. Line or grease muffin tin.

Beat together butter and sugar until light and fluffy. Add eggs one at a time, scraping down bowl. With mixer on low speed, add yogurt, mix until combined. Scrape down bowl, and add pancake mix. Mix until well combined. Fold in chopped apple and pecans. Scoop into prepared muffin tins. Bake for approximately 20 minutes or until muffins spring back when touched.

Makes 12 standard muffins.

Apple Raisin Cookies

Ingredients

  • ½ Cup Butter, soft
  • ¼ Cup Brown Sugar
  • ¼ Cup Granulated Sugar
  • 3 Eggs
  • 1 ¼ Cup GF Apple Cinnamon Pancake Mix
  • 1 Cup Gluten Free Oats
  • ¼ Cup Raisins

Directions

Preheat oven to 325° F.

Beat together butter and sugars until light and fluffy. Add eggs one at a time, mix and scrape down bowl. Add pancake mix, and mix until well combined. Mix in oats and raisins. Chill dough for at least one hour or until firm. Scoop or roll dough into balls and bake on a greased cookie sheet for approximately 10-15 minutes. Makes about 2 dozen cookies.

Gingerbread Muffins

Ingredients

  • ½ Stick Butter, soft
  • ¾ Cup Light Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • ¼ Cup Water
  • 1 ¾ Cup GF Gingerbread Pancake Mix

Directions

Preheat oven to 325° F. Line or grease muffin tin.

Using and electric mixer, beat butter and light brown sugar together until light and fluffy. Add eggs one at a time, add vanilla extract and then add water. With the mixer on low speed, add pancake mix a ¼ at a time. Scrape bowl, turn mixer speed up and mix until well combined. Scoop batter into prepared muffin tins. Bake for approximately 20 minutes or until muffins spring back when touched. Makes 12 standard muffins.

Gingersnaps

Ingredients

  • ½ Stick Butter, soft
  • ¾ Cup Granulated Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 ½ Cups GF Gingerbread Pancake Mix

Directions

Preheat oven to 350° F.

Using an electric mixer, beat butter and sugar together until light and fluffy. Add eggs one at a time and then add vanilla extract, mix and scrape down bowl. Add pancake mix a ¼ cup at a time, turn up mixer speed, mix until combined. Scoop out about a tablespoon of batter onto a greased cookie sheet pan and place in the freezer for about 20 minutes to chill and firm the dough. Bake for approximately 15 minutes. Makes about 2 dozen cookies.
